Blini with caviar and creme freche or smetana

Blini
80 g flour 00
1 pinch salt
5 g yeast, crumbled
1 dl milk, lukewarm or kefir
2 c. butter, liquid, cold
1 yolk
100 grams crème fraîche
20 g Russian Tradition Tzarsky Caviar
METHOD
In a bowl, mix the flour with the salt. Mix yeast and milk, deduct in the bowl. Combine butter and yolk, mix until smooth batter. Cover and let the dough rest at room temperature for approx. 1 hour. Heat a knob of butter in a pan. Bake 10 blini of approx. 5 cm for approx. 2 1/2 minutes on both sides. Garnish the blini with crème fraîche and caviar.
PREPARATION: 10 min.
REST: 4 h for the butter
COOKING: 10 min.
